I'm not following how people are using these pets, because you essentially have to tell all your pets to attack at once, which means the commander will run off into the middle of the enemy group and get himself killed (and there goes your interrupt pets)... or am I missing something about controlling the pets?

You are correct. There is no way to use pets for interrupts other than having your commander attack. You just have to figure out the right timing.

It's been a while since I've played my BD, but I seem to recall that your sub-pets stayed attacking your target even if you told your commander to switch. So you could target one, let you commander get a hit on him, then move the commander to another player -- that would get two pets on two different people.
Not sure if that still works, or ever worked outside of PVE...like I said, it's been a long time...

It does work although when you have them set on defensive they tend to peel off and attack whatever is attacking you...
